Karela pickle is made from slices or chunks of bitter gourd (karela / bitter melon), preserved with oil, salt, spices, and often other ingredients like mustard, chilli, turmeric, asafoetida, fenugreek, and sometimes tamarind or lemon juice.

The bitterness of karela is balanced by the tangy, spicy, and aromatic spices — resulting in a complex flavour: slightly bitter, spicy, tangy, and robust — making it a popular condiment or side to rice, rotis, parathas, curd-rice, dal-khichdi etc.
